In Duernas, the olive groves gather at the beginning of October, which is when the olive enters the ENVERO. This moment is the most beautiful manifestation of the change of Nature; when the fruit changes color from green to purple, showing the aromatic and flavor strength, together with its greater nutritional richness.
The amount of juice that the olives give at this time is less than half that when they exceed the veraison (from 20 to 10% yield) and at Finca Duernas we are aware of the volume sacrifice but we opted to be able to offer the best juice that the olive tree can produce. This is our main secret.
